Ingredients

1 pound ground beef, chicken, turkey tofu (EEEK) whatever you want.

1 onion, diced

1 green bell pepper, diced ( I used a red bell pepper in the photo)

1 can (14.5 ounces) corn, drained

1 can (14.5 ounces) black beans, drained and rinsed

1 can (14.5 ounces) diced tomatoes, not drained (I used fire roasted tomatoes)

1 packet taco seasoning. (Home made taco seasoning if you want!)

1 cup rice

2 cups beef stock
Instructions

In a wide pan over medium-high heat, brown the ground beef. Drain any grease if necessary.

Add the onion and bell pepper and cook until they begin to soften, about 5 minutes.

Stir in the corn, beans, tomatoes, taco seasoning, rice, and beef stock. Bring to a boil, then reduce heat to a simmer and cover. Cook for 20–25 minutes, stirring occasionally, until the rice is done.

Once the rice is cooked through, remove from the heat and let stand uncovered for another 5 minutes, until it thickens.

Serve with your favorite toppings (shredded cheese, sour cream, cilantro, etc.) and enjoy!
