Ingredients
Glaze
- 1/2 cup of your favorite BBQ sauce
- 2 tablespoons of honey
- 1 teaspoon of crushed red pepper
Skewers
- 2 chicken breasts or 4 chicken thighs
- 1 red or green bell pepper c
- 1 red or yellow onion
Instructions
Mix the BBQ sauce, honey and crushed red pepper flakes in a small container and set aside. You may need to warm it a bit to get it to blend properly.
Cut the chicken into bit sized pieces. Season with salt and pepper to taste. I use Kinder’s “The Blend” on just about everything I cook.
Cut the onion and bell pepper into small leaves.
Add them to the skewers alternating. Its not rocket science. There is no right or wrong way to do it.
Cook on a grill, charcoal, gas or pellet for about 8 minutes on high heat, then turn once and cook on the other side for about the same amount of time. I cook until the chicken reaches 160 then remove and let sit. The skewers will finish the cooking to 165.
