Servings: 3–4 | Cook Time: 4–6 hours (low) or 2.5–3.5 hours (high)
Ingredients
-
1 lb pork loin
-
1 Tbsp olive oil (optional for searing)
-
1/4 cup Onion Soup Mix (or one packet of store brand equivalent)
-
1 medium yellow onion, thinly sliced
-
1 cup beef broth (or chicken broth for milder flavor)
-
1 tsp garlic powder
-
½ tsp black pepper
-
1 Tbsp Worcestershire sauce
-
1 Tbsp butter
-
Optional: ½ cup sliced mushrooms for extra savory flavor
Instructions
-
Optional Sear: Heat olive oil in a skillet over medium-high heat. Sear the pork loin for 2–3 minutes per side until golden brown. This deepens the flavor.
-
Layer the Onions: Place sliced onions in the bottom of your slow cooker.
-
Season & Arrange: Place pork loin on top of onions. Sprinkle garlic powder, pepper, and the entire packet of onion soup mix over the pork.
-
Add Liquids: Pour broth and Worcestershire sauce around (not over) the pork to keep seasoning in place.
-
Butter Boost: Place the butter on top of the pork.
-
Cook:
-
Low: 4–6 hours (juiciest)
-
High: 2.5–3.5 hours
Pork is done when it reaches 145 °F internal temp, then rest 5–10 minutes before slicing.
-
-
Serve: Spoon the onion-rich juices over the sliced pork. Excellent with mashed potatoes or crusty bread to soak up the sauce.
Extra Onion Flavor Boost (Optional)
-
Add 1–2 tsp onion powder along with the soup mix.
-
Use two onions instead of one.
-
Replace ½ cup of the broth with French onion soup for a deeper, sweeter onion note.
