Ingredients:
2 medium cucumbers, thinly sliced
1 small sweet onion (like Vidalia), thinly sliced
½ cup white vinegar
¼ cup water
2 tablespoons sugar (adjust to taste)
½ teaspoon salt
¼ teaspoon black pepper
Optional: a few sprigs of dill or a pinch of red pepper flakes
Instructions:
Slice cucumbers and onion thinly and place in a medium bowl.
In a separate small bowl or measuring cup, whisk together vinegar, water, sugar, salt, and pepper until sugar dissolves.
Pour mixture over the cucumbers and onions.
Toss to coat, cover, and refrigerate for at least 30 minutes (but you can eat it right away).
Optional: garnish with fresh dill before serving.
Storage Tip: Keeps well in the fridge for up to 3 days — gets even better as it marinates!
