Ingredients (about 24 cookies):

1 cup peanut butter (smooth or chunky, your choice)

3/4 cup sugar
- 1/4 cup brown sugar

1 large egg

1 teaspoon vanilla extract

½ teaspoon baking soda

Pinch of salt
Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, mix together peanut butter, sugar, egg, and vanilla until smooth. Add baking soda and salt if using.

Roll the dough into 1-inch balls and place on the baking sheet.

Use a fork to press a crisscross pattern on top of each cookie.

Bake for 9–11 minutes, until edges are lightly golden.

Let cool on the sheet for 2 minutes, then transfer to a wire rack.
Tips:

For extra chewy cookies, use brown sugar instead of white.

For peanut butter lovers, stir in ½ cup of peanut butter chips or chocolate chips.
