- 1 can (20 ounces) pineapple chunks with juice
- 1 red bell pepper diced
- 1 onion diced
- 1 – 2 tablespoons minced garlic (adjust for taste)
- 1/2 cup of soy sauce
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon dried ground ginger
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 2 pounds pork loin, trimmed and cut into bite size pieces
- 2 tablespoons cornstarch slurry
- sesame seeds and green onions for garnish
- cooked rice
Put everything EXCEPT THE CORNSTARCH SLURRY in the crock pot and mix together well.
Cook on high for 3 – 4 hours or low 6 – 8 hours.
The last 1/2 hour, mix in the corn starch slurry and cook on high to thicken the sauce.
Serve over cooked rice, I prefer Basmati but any rice will do. Garnish with sesame seeds and green onions.
