This is a basic poultry seasoning for use on a smoker or in a regular oven. It is not a “RUB”. You spread it lightly on the outside and INSIDE of the bird. I also spread it UNDER the skin and add a few patties of butter under the skin. Super easy.
- 4 tablespoons Kosher salt (course ground or regular)
- 2 tablespoons fresh ground black pepper
- 2 tablespoons paprika (if cooking in the oven, use smoked paprika)
- 2 tablespoons granulated garlic
- 2 tablespoons onion powder (optional)
Lightly spread the mixture inside the bird’s cavity as well as the outside. It should not be thick, Just spread as in the photo.
