1 can Cream of Celery Soup
4 cups Chicken Stock
1 Can refrigerated biscuits (8 biscuits)
Frozen veggies of choice
1 pound rotisserie chicken, pulled and shredded to taste
Black pepper to taste
Garlic powder to taste
Onion powder to taste
Green onions to taste
This is the easiest way to make the classic chicken and dumplings dish. Die hards and purists will hate it but it tastes GREAT, is super easy to make for a quick and hearty meal.
You can either buy a chicken already cooked and shred it yourself, buy preshredded chicken, or cook a chicken yourself. Up to you.
In a large pot or dutch oven, pour in your Cream of Celery soup and chicken stock and heat over low to medium heat. Not quite a boil.
While this is heating up… take the biscuits and roll them out thin and flat with a rolling pin. they should come out about 4 inches wide by 8 inches long and a 1/4 inch thick. It is not real critical but thin and flat.
Cut the flattened biscuits into squares with a pizza cutter.
Slowly add the dumplings to the pot, a handful at a time stirring as you add them.
Add the chicken to the pot stirring well.
Add frozen vegetables as desired, and season to taste.
You can add more chicken broth/stock if needed to loosen up the mixture or add a cornstarch slurry to thicken it up a bit.
Let simmer for 15 minutes covered and enjoy!
