Pasta-less Salad

I was in the mood for pasta salad—so I made one without the pasta! It’s light, refreshing, and packed with flavor. Perfect for a low-carb, keto-friendly side dish. 🥗✨


Colorful vegetable salad with cherry tomatoes, red onions, bell peppers, black olives, cucumbers, and pepperoni slices, vibrant and fresh, perfect for healthy snacking or meal prep. Ingredients (Makes 4 cups)

  • 1 cup mini cucumbers, sliced

  • 1 cup cherry tomatoes, halved

  • 1 small can of sliced black olives
  • 1/4 cup mini salami, halved

  • 1/2 cup mini pepperoni

  • 1/2 red onion thinly sliced
  • 2 mozzarella string cheeses, cubed (I used mozzarella cheese balls)

  • 1 oz feta cheese (omitted in the photo because we don’t care for feta)

  • 1/4 cup prepared Good Seasons Italian Dressing

  • 1/8 tsp black pepper

  • 1/8 tsp cayenne pepper


Instructions

  1. Add all ingredients to a large bowl.

  2. Mix thoroughly until well combined.

  3. Chill before serving for best flavor.


Nutrition (Per 1 Cup Serving)

  • 151 calories

  • 3g net carbs (4g total carbs – 1g fiber)
