Classic Peanut Butter Cookies

Ingredients (about 24 cookies):

  • 1 cup peanut butter (smooth or chunky, your choice)

  • 1 cup sugar (white or ½ white + ½ brown sugar for softer cookies)

  • 1 large egg

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking soda (optional, adds a little lift)

  • Pinch of salt (optional, if your peanut butter isn’t salted)


Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, mix together peanut butter, sugar, egg, and vanilla until smooth. Add baking soda and salt if using.

  3. Roll the dough into 1-inch balls and place on the baking sheet.

  4. Use a fork to press a crisscross pattern on top of each cookie.

  5. Bake for 9–11 minutes, until edges are lightly golden.

  6. Let cool on the sheet for 2 minutes, then transfer to a wire rack.


Tips:

  • For extra chewy cookies, use brown sugar instead of white.

  • For peanut butter lovers, stir in ½ cup of peanut butter chips or chocolate chips.
